Buc-ee's Lemon Crisps

Not every Buc-ee's sweet needs to be fudge-level rich. These are the light option, the cookie you reach for with afternoon coffee when you don't want to need a nap afterward.

In our opinion the lemon is bright rather than sour-candy tart, and the bite-size shape means they disappear by the handful. People look for them as Buc-ee's lemon cookies, Buc-ee's lemon crisp cookies, or the mini lemon cookies from Buc-ee's.

Honest notes. They're crisp, not chewy, so soft-batch cookie people may want to look elsewhere. A tub seems like plenty until it's open on the counter, and then it's a different story. If allergies matter in your house, check the label on the tub before sharing. Our serving ideas: a few on the side of a scoop of vanilla ice cream, or crumbled over yogurt. They'd also look right at home in a gift basket next to a jar of the Strawberry Lemonade Jam.
